This is a nice simple dish for cooking
Prawns. My friends from Nelson B.C. love this one, especially Micah.
Normally serves 4 but I double it for him.

| Ingredients |

| 1/4 cup of olive oil |
2 tbsp of minced garlic |
| 1/4 cup of sweet red onion or shallots |
1/2 cup flour |
| 2 tbsp lemon juice |
1/4cup butter |
| 2 lbs of prawns shelled |
1 tsp garlic |
| 1/2cup white wine |
Salt and pepper to taste |

| Method |

| 1. Coat prawns in flour dusting
off excess. |
| 2. Heat up olive oil on medium
to high heat. Add prawns cook for a minute. Add onions and garlic. Sautee
for another minute. Once cooked add wine and lemon juice. Move the prawns
around ensuring they are all cooked. The prawns will turn opaque when
cooked. let the wine reduce down before removing from heat . |
| 3. Add the butter and coat all
the prawns, serve and enjoy. Have the rest of the wine with your prawns. |

| The secret to doing this recipe
is to make sure the pan is nice and hot when you first put the prawns
in, the reason why is to sear them very fast and seal them up if you don't
they turn mushy, you want them nice and firm and crisp. |
